Why oh Why???

I’ve found some pretty surprising recipes in my quest for healthy sweets. Often they contain ingredients thatΒ  seem completely out of place. (For instance, I make a 3 ingredient cobbler which relies on a can of diet 7 up to pull it all together.) Because I love to bake, I find myself willing to take more and more chances in the kitchen… I’m afraid I went TOO FAR this weekend.

bundt-cake

This is my first attempt at a bundt cake. Looks pretty good, I think. But don’t judge it too quickly…

bite uh-oh

The “amazing” secret ingredient in this recipe is SAUERKRAUT. All the comments on the site I got the recipe from (okay, BOTH comments) said that you couldn’t detect the taste in the finished cake. The whole purpose of including the sauerkraut is to keep the cake moist and add fiber. I’m not adding this one to my file. πŸ™

Aside from playing Betty Crocker, the weekend was just another ordinary weekend. April and I went up to see Mom and our grandparents in Tower – that was nice. We spent the rest of our days being lazy and enjoying the onset of spring!

Speaking of which… spring break was fantastic. I made it a point to get outside every day – not hard to do with the sun shining and warm air! I got a few house projects finished and I even got to see Lo. Yes, she DOES still live within driving distance. I was begining to wonder… πŸ™‚

Now we’re into state testing in school, and the calendar is piling up with all kinds of events. We’ve got tons of excitement coming up in the next few months; it’s getting tough not to wish away some of these in-between days. I’ll keep ’em, though, if the 50? + will stick around!

Well that bunt cake looks impressive. It sounded good in theory. Was it not sweet enough?

Glad you had a nice spring break. How’s the running coming?

    Hmm… that’s interesting…

I’ve done applesauce in place of oil before, but never kraut. Your story made me laugh!

    Hope you’re enjoying spring!

The cake may have been not-so-tasty, but it is beautiful! It looks like it came from a fancy bakery… nice work on the visual presentation! Sorry it didn’t turn out as delicious as it looked with all the work you must have put into it. You will probably always remember with smiles the time you made saurkraut cake!! I love that you were that daring πŸ™‚

    Miss and love you lots!

Hmmm…….well, you get an A+++ for presentation. It looks fabulous. I’m with April. Stick with the wacky. Or at the very least, just make a regular bundt cake. In fact….you could bring it to the hospital with you after *Kate* arrives. I’ll trade you, baby for cake! Love you lots!

Also, this child is going to seriously be peeved if it’s a boy, and finds out we’ve been calling him Kate for months…….

Ha! That’s funny! Sounds like something I would do. (I’m Tiff & Rick’s friend so I’m not blog stalking you out of the blue. Plus I feel like I know y’all from how they talk about you.)

    Here’s a good healthy recipe:

    http://www.passionatehomemaking.com/2009/03/chocolate-coffee-cake.html

I substitute 1/3-1/2 c honey for the sweetener and 1/4 applesauce for 1/4 c butter/coconut oil. Oh, and I double the cocoa because nothing is tooo chocolatey.

I know it’s not healthy like steamed broccoli, but it’s yummy and takes the edge off a sweet craving and doesn’t put me in a diabetic coma …

Well you just never know until you try . . . . and I’ll be sure to learn from your experience. Just say no to kraut cake!
